
I love bananas, I love them so much.
But I’ve never had a banana bread recipe that I could eat in my kitchen.
When I found out that there was an easy banana loaf recipe, I was hooked.
I made this naan bread for dinner and it was an instant hit.
So I thought why not give it a go myself?
This simple, quick and tasty banana bread was a great recipe to try out in my own kitchen.
You can easily make this banana bread and eat it for lunch or dinner.
If you are looking for a healthy banana bread that is gluten free and low in sugar, then this recipe is for you!
If you are not keen on a banana loaf, then you could use any type of banana or add other fruits and veggies.
Just be sure to use fresh bananas and not frozen bananas.
Here’s what you need to make this recipe: Banana loaf dough: 2 large bananas, sliced into long strips or wedges 1-inch piece of white breadcrumbs, optional 2-inch pieces of white chocolate chips, optional 1/2 cup milk, for whipping up the batter 1/4 cup flour 1 teaspoon baking powder, for dusting the banana slices (optional) 2 teaspoons baking soda 1/8 teaspoon salt (optional; to taste) Optional toppings: sliced almonds, fresh lemon, chopped pecans, or shredded coconut For the batter: 1/2 stick butter, cut into small pieces 2 tablespoons sugar 1/3 cup milk 2 tablespoons sugar, for rolling the dough into balls 2 tablespoons chopped pecan pieces (optional), optional (or for making the filling) 1 teaspoon vanilla extract 1 cup chopped fresh basil leaves, or 1/6 cup chopped dried basil leaves For the topping: fresh lemon, diced (or 1/5 cup fresh lime) or fresh orange (optional, if you don’t like fresh lemon) For the topping and filling: spaghetti squash, sliced (optional for filling) for filling: 1 cup fresh, chilled pasta, washed and drained, chopped 1 cup shredded cheddar cheese, shredded 1/1 cup grated parmesan cheese For the filling:1/4 to 1/7 cup sliced almonds or 1 tablespoon fresh chopped peaches, for topping 1/16 to 1 teaspoon vanilla bean paste, for sprinkling over the banana bread for dipping, optional For the glaze:1 cup milk (or water), for rolling into balls 1/10 to 1 cup powdered sugar (optional if you want to sprinkle more glaze over the batter), for sprinklings optional, for dipping 1 tablespoon lemon juice, for drizzling over glaze for dipping (optional ) For serving: 1/9 to 1 1/20 cup fresh mozzarella cheese (optional to garnish) Directions: 1.
Preheat oven to 400 degrees F. Place the bananas in a baking pan and brush with the melted butter.
Place in the oven for 5-6 minutes, or until the bananas are just golden.
Remove from the pan and let cool.

Using a hand mixer, mix the breadcrumb mixture with the milk and sugar until combined.
Add in the flour, baking powder and baking soda.
Mix until the flour is moistened.
Add the milk to the bowl of the mixer, beat until combined, then add the remaining ingredients.

In a separate bowl, whisk the egg whites until combined with the flour mixture.
Add this to the batter.

Add the chopped white chocolate and milk to both the flour and egg mixture.
Mix on medium speed until the mixture is smooth.

Add one tablespoon of the flour to each half of the batter and mix on low speed for 30 seconds.

Using a small, non-stick spray bottle, coat each slice of breadcrumber with the remaining flour mixture and then spray with a little more flour mixture, if desired.

Place the slices of bread crumbs on a baking sheet lined with parchment paper.

Bake for 20-25 minutes, until the bread crumb slices are lightly browned.

Remove the slices from the baking sheet and let them cool for about 15 minutes before slicing.

To serve, sprinkle the topping on each slice, drizzle the glazing over the bread, and drizzle with lemon juice.
If desired, you can sprinkle some chopped basil leaves on top of the glazed banana bread.
