To make the cranberry orange loaf, soak the fruit for an hour and then drain it.
Heat the juice of half a lemon in a frying pan and add to the fruit and mix well.
Fry the fruit on a medium heat for around five minutes, stirring constantly, until the fruit is golden brown.
Transfer the fruit to a bowl and add some honey and some olive oil to the bowl.
Add the lemon juice and lemon zest, and continue to stir until the batter is thick and slightly thickened.
Serve with a little butter, chopped parsley and raisins.
